Pumpkin soup

Ingredients:

800 g pumpkin flesh
250 g carrots
1 onions
800 ml vegetable stock
orange juice
wine vinegar
honey
curry
salt
parsley
chives
sunflower or pumpkin seeds

Preparation:

Braise the pumpkin, carrots and the onion lightly, add 800 ml vegetable stock and cook for 10 min. Then puree.

Season with: orange juice, vinegar, honey, curry, salt, parsley and chives.

You may garnish the soup with roasted sunflower or pumpkin seeds.
