Gratinated tomatoes

Ingredients::

8 mid-sized tomatoes Sportivo or Philona
1 bunch of parsley Afrodite
several leaves of basil Magic Blue or Magic White
2 cloves of garlic Therador
50 g freshly grated parmesan or pecorino
4 tbs. breadcrumbs
salt, pepper, 4 tbs. olive oil

Preparation

Wash, drain and cut tomatoes in halves.

Wash, drain and finely chop parsley and basil.

Peel the cloves or garlic and chop them, too.

Grease a flat baking dish. Pre-heat the oven to 225°C.

Mix the herbs with garlic, grated cheese and breadcrumbs in a bowl. Season with salt and pepper and add ca. half of the olive oil.

Put the tomatoes (cut face up) side by side in the baking dish, salt and baste them with the mixture you have just prepared. Dripple the remaining oil on them. Bake for about 20 - 25 minutes until they have a golden brown crust.
