Peperonata

Ingredients:

500 g pepper, yellow, red, green Almira Midi Yellow, Alimra Midi Red, Sweet Green
500 g tomatoes Sportivo or Philona
3 large onions, in slices
2 cloves of garlic, in slices
4 tbs. olive oil
2 tbs. balsamico
1 finger twist sugar, salt, pepper
1 chilli, chopped
2 twigs thyme SilverQueen, Mystic Lemon
1 twig gourmet rosemary Abraxas or hardy rosemary Blue Winter or hanging rosemary Riviera

Preparation

Wash and quarter peppers. Pour boiling water over tomatoes, peel and quarter them. Remove stalk parts and seeds.

Heat oil and shortly braise onions in it. Add vegetables, cloves of garlic and vinegar. Pluck herbs and add them as well. Season with salt, pepper and sugar.

Allow to stew (lid closed) at low heat for 30 minutes.

Serve as starter with baguette.
