The perennial savory 'Bolero' has a strong and spicy flavour. Used for leguminous and meat dishes. Entire shoots can be cooked and are to be removed before serving. Besides the cuisine it is also used for its expectorant and digestion stimulating characteristics in, e.g. herbal liqueur.
